One of my husband's favorite memories is his mother making homemade Avgolemono soup. It's a wonderful mix of egg, lemon, chicken and rice. Basically, it's a very difficult creamy chicken soup with lemon flavoring. What makes it so difficult is adding the eggs and hoping they don't curdle. And that's why I've never attempted to make it myself, until now. And guess what? It wasn't difficult. And best of all, my husband loved it.
